Weekend Recipe: Cilantro-Lime Pork (or chicken)

We got this recipe from our daughter, Emily, who in turn got it from her best friend, Shannon.  So, girls, thank you!  This is an amazingly easy and delicious meal!  Pair it with chips and fresh salsa and some fresh corn on the cob.  You can grill it outside, or on a Foreman, or in a pan over medium heat.  So easy!

Cilantro-Lime Pork or Chicken

4 chicken breast or pork pieces

The combination of fresh cilantro and spicy adobo pepper really makes this sauce phenomenal.

½ c Hellman’s Light Mayo

1 bunch cilantro (stalks trimmed off)

2 adobo peppers

3 cloves of garlic

1 lime’s juice

1t chili powder

Food process all but meat.  Baste meat and grill.  Serve with chips/salsa and corn on the cob (or canned sweet corn).

*Tip: You may want to double the recipe to have a dipping sauce on the side.



  1. Sounds yummy! Not sure what an adobo pepper is though and if I can get that in Scotland. I’ll look next time I go to the store. (Either that, or I’ll get Emily to make it for me!) 🙂

    • Kate, you can not get in in Scotland but Emily says you will find it on the Mexican isle in the grocery stores in the states.
