Weekend Recipe: Spanakopita

This is an awesome fresh dish I enjoyed at a church brunch.  I got the recipe and am passing it along to you- from our house to yours!

Fresh spinach and Feta really make this dish.

Spanakopita

  • 1.5 pounds fresh spinach
  • 1 large bunch green onions—cut up and sauté in 4 T butter
  • 7 eggs—whisk in a bowl
  • 1 pound of feta cheese crumbled
  • 8 oz cream cheese–room temp
  • 1 tsp black pepper or to taste

{Mix all the above ingredients together in large bowl. Try to get all the cheese dispersed evenly as possible.}

  • 16 oz pkg of phyllo dough—I like Apollo brand. If you buy it frozen, let it thaw overnight in fridge. It is better if you can find dough that has not been frozen.
  • Melt 2 sticks of butter

Get jelly roll pan that is approx 17X13—They are sold at Sam’s with 2 in pkg.

Butter the bottom of the pan

Layer 9 sheets of dough in the pan brushing each layer LIGHTLY (meaning don’t press hard) with a pastry brush dipped repeatedly in melted butter

Put half of the spinach mixture on top of the phyllo and distribute evenly.

Layer 9 more sheets buttering between each one.

Put last half of spinach mixture on top of dough and distribute evenly.

Layer the rest of the phyllo dough buttering between each layer. (there are usually 28-29 sheets of dough to 1# of dough so you are dividing the number of sheets by 3 and making each of the layers with that number of sheets.

Bake in preheated 350 degree oven for approximately 30 minutes—it should be nicely browned.

{Tip: You CAN make it up the day before and put in the fridge covered. Then bake it the next day.}

  1. I am trying to eat more spinach (and get the kids to, also). We even had smoothies this morning with spinach (couldn’t taste it). Anyway, love fresh spinach and I am always a fan of Feta!!
