Weekend Recipe: Sour Cream Chicken

This is a great, easy casserole dish that can be doubled and made in 2 smaller (9×9) pans.  You can freeze one, take it to a potluck, or give it to a new mom!  The possibilities are endless.

Sour Cream Chicken

Just pick your favorite cracker and crush them to make a yummy, crumby topping.

  • 4 cooked, diced chicken breasts
  • 1 c sour cream
  • 1 can cream of chicken soup
  • 1/4 c chicken broth
  • 1 c cracker crumbs (Ritz or saltines work great)
  • 1/4 c melted butter
  • 1/2 pkg shredded cheese (cheddar or Colby-Jack)

Mix crumbs and butter.  Put 3/4 of the mixture into a greased 9 x 9 baking dish.  Mix soup, sr cream, and broth and set aside.  Put chicken on top of crumbs in pan.  Pour soup mixture on top, then sprinkle the rest of crumbs.  Finally, sprinkle the cheese on the very top.

Cook for 20 minutes at 325 degrees.
