Weekend Recipe: Butterfly Chicken for the Grill

This is a great marinade for chicken on the grill Emily got from a friend in Scotland.

It's hard to beat summer grilling.

Slice 4 chicken breasts horizontally, but not all the way through, then set aside. In a bowl combine

  • 1 Tbsp Paprika
  • 1 Tbsp Rosemary
  • 1 Tbsp Thyme
  • 1 Tbsp Ground Cumin
  • 1 Tbsp Ground Coriander (Cilantro)
  • 2 crushed garlic cloves
  • the zest and juice of 2 limes.

Rub the mixture onto the chicken breasts and allow to marinade for 30 minutes in the refrigerator before cooking on the BBQ.



  1. Rachel Owens loved this marinade!!! She has massive food allergies ad has to eat chicken all the time, so it was a great option for her!
