Weekend Recipe: Cold Tortellini Salad

Summer in Texas is just too hot for warm food unless it comes off the grill.  So, I thought I’d share a great cold salad that’s perfect for dinner for the fam or a potluck.

Cold Tortellini Salad

  • 1 package cheese-filled tortellini, cooked and drained
  • 1 small can sliced black olives
  • 3/4 c cubed cheese (either ColbyJack or Feta)
  • 1/4 c thin-sliced red onion
  • 1/2 c chopped green bell pepper
  • 1 tomato, chopped or wedged
  • 1 jar marinated artichoke hearts
  • 1/4 c torn basil (could use spinach)
  • 1/4 cup olive oil
  • 1/4 c red wine vinegar (salad vinegar)
  • a sprinkle of Italian herbs

Toss it all and chill so that the pasta isn’t warm.  If you’re feeling really frisky, throw in some chopped lettuce.
