Weekend Recipe: Cobb Salad

Emily, Becky, and I love salads!  A cool, fresh salad on a hot Texas afternoon is always delicious!  A Cobb  Salad is great even for a dinner and has (turkey) bacon, chicken, and eggs for protein, so even your men shouldn’t complain!  Plus, it is a healthy option for a high protein diet.

Cobb Salad

  • 1 head of iceberg lettuce, washed and chopped
  • 2 tomatoes, chopped
  • 2 eggs, hard-boiled and chopped
  • 4 pieces of bacon {we use turkey rashers}
  • 1 cooked chicken breast, cubed
  • Bleu Cheese crumbles
  • 1 small can of sliced black olives
  • 1/2 red onion, chopped
  • cheese cubes
  • 1 avocado, cubed
  • Bleu cheese or honey mustard dressing

Line a good-sized bowl with half the lettuce.  Then, add each chopped ingredient in strips across the lettuce.  Em likes to use Honey-Mustard dressing since good, creamy Bleu Cheese dressing is non-existent in the UK.  Mmmm.  Delicious, fresh, and sort of  healthy.  🙂
