Weekend Recipe: Great Summer Salad

You know me, I love a good salad.  On a hot summer day, little beats a great BBQ and a delicious, light salad.   Tired of the same old thing, I threw together some new things and loved my creation!  I hope you do, too- if you try, make sure to let me know in the comments!

Summer Salad

  • several cups of romaine lettuce or fresh spinach leaves
  • 1/2 c Dried fruit (I like cranberries)
  • 1/4 c walnuts or pecans
  • 1 peach, sliced
  • a handful of sliced strawberries
  • a handful of red grapes
  • 1/2 red pepper, chopped
  • 1/4 c sliced Kalamata olives
  • 1/2 of one small red onion, sliced very thin
  • 1/2 c blue cheese or Feta cheese

Toss with Poppyseed or Raspberry Walnut Vinaigrette Dressing.  Feel free to add or omit anything!

Such a great salad to hare with some girlfriends!
