Weekend Recipe: Shortbread Candy Bars

As you know, Emily lives in the land of shortbread, that is Scotland.  She recently shared a recipe with me that she got from a friend there for shortbread candy bars.  They’re sure to be a hit at Thanksgiving, Christmas, or any festive event!

Shortbread Candy Bars

  • 1 cup butter, softened
  • 3/4 cup packed light brown sugar
  • 1 teaspoon salt
  • 2 cups all-purpose flour
  • 1 cup semisweet chocolate chips or chunks of dark chocolate
  • 2 cups (or so) assorted chocolate candies or roughly chopped candy bars (such as M&Ms)

Preheat oven to 350 degrees F.  In a large bowl, using an electric mixer, beat butter, brown sugar and salt until light and fluffy (3 minutes).  With mixture on low, gradually add flour and beat until combined.  Dough will be crumbly.  Press dough evenly in to an 8-inch square baking dish.  Bake until golden brown, 30-35 minutes.

Scatter chocolate chunks over shortbread.  Bake until soft, 1 minute.  With the back of a spoon, spread chocolate evenly over the shortbread.  Scatter candies over the top.  Let cool 30 minutes, then refrigerate briefly to set chocolate.  Enjoy!
