Weekend Recipe: Getting kind of Granola

Before you tune out because you saw gluten-free, you need to know this is a delicious granola recipe that is soooo good for you!

Gluten-Free Granola

  • This granola majors on nuts and spices.

    2 c almonds

  • 1 c macadamia nuts
  • 1 c pumpkin seeds
  • 1 c raisins or cranberries
  • 1 T vanilla extract
  • 1/2 t cinnamon
  • 1/2 t celtic sea salt

Place nuts and seeds in a bowl of water and soak overnight.  Put raisins or cranberries in a separate, smaller bowl with 1/2 c- 1c water and soak overnight.  Put raisins or cranberries and its water in a food processor and blend.  Drain nuts and seeds and discard water.  Add nuts and seeds to food processor and pulse until coarsely chopped, to the consistency of granola (shocking).  Add vanilla, cinnamon, and salt and pulse briefly to distribute.  Transfer mixture to 2 parchment-lined baking sheets and bake 45 min at 250 F.

*For a fun treat, you can add coconut to the food processor!
