Weekend Recipe: Heart of Palm Salad

This is a great salad Em and I both loved while we were in Scotland.  We both love hearts of palm, and this salad dressing was surprisingly good.  You have to try it!

Heart of Palm Salad

  • 1 (14.5 oz) can hearts of palm, drained and rinsed
  • 1/4 red onion, thinly sliced
  • 1 yellow bell pepper diced
  • 1 jicama, peeled and cut into 1/4-inch strips (we had to use butter lettuce because Scotland doesn’t have jicama)
  • 1 jalapeno pepper, seeded and minced
  • 1/4 c chopped cilantro
  • 1/4 c fresh lime juice
  • 2T olive oil
  • 1t salt
  • 1/2 t ground cumin
  • 1 avocad0, diced

Cut hearts of palm into slices.  Stir hearts of palm with next 10 ingredients in a large bowl.  Cover and chill 1-8 hours.  Stir in avocado and serve.
