Weekend Recipe: Bruschetta Bagels!

Originally found on Rachel’s blog, this is a great, easy, fast, cheap {what else can you ask for?} way to have bruschetta at home!

Bagel Bruschetta
  • 3 halved bagels
  • 2 cups diced tomatoes
  • 1/2 cup chopped yellow onion
  • 1 tablespoon oregano (jarred or fresh)
  • 2 tablespoons basil (jarred or fresh)
  • shredded mozarella cheese (about two handfuls)
  • 2 tablespoons of olive oil
  • 1 or 2 garlic cloves, minced
{Preheat oven to 300 degrees}
  1. Place bagels on a cookie sheet
  2. Mix oregano, basil, olive oil, and garlic
  3. Spread diced tomatoes and onions on bagels
  4. Sprinkle cheese on top
  5. Drizzle oil, garlic, and herb mixture over tomato/onion mixture and cheese
  6. Bake 15 minutes or until cheese is melted
