Weekend Recipe: Green Beans in Yellow Pepper Butter

Even if you love green beans, sometimes it’s nice to have a new taste of them.  Here is a simple, delicious recipe for the next time you crave a healthy, creative side dish.

Green Beans in Yellow Pepper Butter

  • Looking for a way to jazz up your green beans?

    2 medium sweet yellow peppers, divided

  • 7 T butter, softened and divided
  • 1/4 c pine nuts
  • 1T lemon juice
  • 1/4 tsp salt
  • 1/8 tsp pepper
  • 1 1/2 # fresh green beans, trimmed
Finely chop 1 yellow pepper.  In a small skillet, saute pepper in 1T butter until tender, then set aside.
Place the pine nuts, lemon juice, salt, pepper, and remaining butter in a food processor.  Cover and process until blended.  Set aside.
Place beans in a large sauce pan and cover with water.  Cut remaining pepper into thin strips; add to beans.  Bring to a boil.  Cover and cook for 5-7 min or until crisp-tender.  Drain.  Place vegetables in a large bowl; add butter mixture and toss to coat.
