Weekend Recipe: Couscous with Toasted Pine Nuts

I am not normally a huge fan of couscous, but this recipe really surprised me!  I loved it- hope you do, too.

Couscous with Toasted Pine Nuts

  • You can even stuff a tomato with the finished couscous for an even yummier side dish!

    4 T (1/2 stick) unsalted butter

  • 2 c chopped yellow onion (2 onions)
  • 3 c chicken stock
  • 1 1/2 t salt
  • 1/2 t black pepper
  • 2 c couscous (12 ounces)
  • 1/2 c pine nuts, toasted
  • 1/2 c minced fresh parsley
Melt the butter in a large saucepan.  Add the onion and cook over medium-low heat for 8-10 min, stirring occasionally, until tender but not browned.  Add the chicken stock, salt, and pepper and bring to a full boil.  Stir in the couscous, turn off the heat, cover, and allow to steam for 10 min.  Fluff with a fork, stir in the pine nuts and parsley and enjoy!
