Weekend Recipe: Ridiculously Delicious Corn

This weekend recipe is in honor of my awesome daughter-in-law Becky who can do southern cooking like none other…though I suspect her mother, Betty, is pretty good too.

Missing the bacon, but still a great addition to any cook-out!

Weekend Recipe: “Fried” Corn

  • 2 strips of bacon
  • 1 can or several ears of corn
  • 1/2 c butter
  • lots of salt and pepper
Fry up the bacon and keep the grease in the pan while you cook the fresh corn…or open the canned corn.  😉 Once the bacon is cooked, pull it out and chop it.  De-ear the corn if you cooked it fresh.  Throw the bacon back in the grease with the corn, butter, and salt and pepper.  Cook for a few minutes or until deliciously golden and buttery.
